BBQ Pulled Pork
Pulled pork is one of God's greatest gifts to man kind. And in my not so humble opinion should only be cooked low and slow.
BBQ PULLED PORK
~12 servings
1 cup Brown Sugar
3 tablespoons Chile Powder
5 tablespoons Paprika
3 teaspoons Garlic Powder
2 teaspoons Salt
1 teaspoon Pepper
2 teaspoons Cayenne Pepper
1 Pork Butt, bone in / skin on
4 onions, cut into halves and then sliced
~1 pint of BBQ Sauce
The night before you wish to serve the pulled pork create the dry rub. In a small bowl combine all of the dry ingredients (to taste), and then rub it all over the pork butt. Wrap in saran wrap and store in the refrigerator over night.
The next day - Preheat the oven to 300F.
In a large dutch oven, add all of the onion slices. Add the meat skin side up on the bed of onion. Add any remaining dry rub to the dutch oven.
Bake in the oven with the cover on for about 5-7 hours, or until it is fork tender.
Once it is done, remove all of the meat and onions. Throw away the bone, skin, and larger fat chunks. Shred with two forks.
Place meat and onions in an electric slow cooker, mix in the BBQ sauce, and cook on low for minimum 1 hour
