Lemon Bars
Lemon bars are one of the easiest desserts out there! This recipe came from my grandmother's Wellesley Cookie Exchange cook book and I made some additions to make it even more lemony.
2 cups Flour
1/2 cup Powdered Sugar
1 cup Butter, melted
4 Eggs
2 cups Sugar
1/4 cup Flour
1/2 teaspoon Baking Powder
1/3 cup Lemon Juice (~2 lemons)
Lemon Zest (~2 lemons)
Preheat oven to 350F.
Assemble Crust
In a large bowl, sift the 2 cups of flour and powdered sugar to combine. Add melted butter and stir until batter is consistent.
Turn out dough into 9x13 baking dish and use fingers to press it out until in one even layer.
Place baking dish in the oven and bake for 25 minutes.
Make the filling once crust is in the oven. In a mixer, cream together eggs and sugar. Beat in the 1/4 cup flour and baking powder. Slowly add in lemon juice, and then then zest.
Pour the filling over the crust and return to the oven. It is easier to leave the baking dish on the baking rack instead of moving it to a counter to pour in the filling. Bake for another 25 minutes. Until top is golden.
Cool completely before topping with powder sugar and cutting into squares.
